Meatballs

Presentation

Meatballs are one of the simplest and most versatile dishes in Italian cuisine. They can be prepared in infinite different variations, in this recipe I propose the version with the basic ingredients, starting from here you can add what you like best: spices, aromatic herbs, other types of meat, vegetables. In most cases in Italy a clove of garlic and chopped parsley is also added, but even in this basic version these meatballs manage to be soft and tasty, so much so that when you start eating them you won't stop.

Ingredients:

  • 350 grams of ground beef
  • 150 grams of ground pork
  • 60 grams of minced breadcrumbs
  • 80 grams of grated Parmesan cheese
  • 1 egg
  • 15 grams of butter
  • olive oil to taste
  • black pepper to taste
  • fine salt just enough

1 Put the ground beef and the ground pork in a bowl, 2 also add the minced breadcrumbs and the grated Parmesan cheese, 3 finally add a large egg and season with salt and pepper.

Preparation of meatballs

4 With one hand, work the mixture by squeezing it between your fingers until the ingredients are perfectly blended. 5 After letting the dough rest in the refrigerator for about 30 minutes, take about 40 grams of it and roll it between your hands until it has a spherical shape, then lightly press the ball and put it back on the cutting board. 6 Repeat the operation until you have finished the dough.

Baking

7 Once the meatballs are made, heat the butter and olive oil in a pan and cook the meatballs over medium-high heat. 8 When they are well browned on one side, turn them over and cook for a few minutes on the other side as well. 9 At this point, lower the heat slightly and cover the pan with a lid for about 4 minutes. Finally remove the lid and, if necessary, give the meatballs a last brown before serving.

Advise

  • You can add whatever you prefer to the mixture, perhaps half ricotta and half parmesan for a more delicate flavour, or a chopped clove of garlic and a bit of chilli for a stronger flavour.
  • If you want you can make them a little smaller and serve them as a delicious finger food.
